Mixed Nut Milk Recipe
Serve 4
1 cup of mixed nuts (mixture of walnuts, almonds, hazelnuts, brazil nuts)
3 cups water
1 tsp. vanilla extract
2 dates, pitted
Soak nuts in water with a piece of vanilla bean overnight. Drain and rinse nuts and place in a high speed blender or Nutribullet. Add water and vanilla extract and blend until smooth, about 10 seconds. Serve immediately or strain out pulp if desired with a cheese cloth or nut milk bag. Pour milk into a resealable container or bottle and store in the refrigerator.
Milk will last 3-4 days in the refrigerator. If straining, reserve pulp to use in smoothies, baked goods, or to make a nut pie crust.
