Cashew Yogurt

Serves 2

1 cup of raw cashews
1/2-1 cup of water
1 tsp. vanilla extract

Add cashews to a bowl and cover with water. Let soak for 1-2 hours.

Drain and rinse cashews. Add cashews and 1/2 cup of water to a food processor and blend until smooth. Add more water if you desire a thinner consistency. Add in vanilla extract and blend until smooth.

Chill in the refrigerator and top with your favorite toppings: frozen/fresh fruit, nuts, cinnamon, homemade jam, etc.

Lasts 3 days in the refrigerator.
