This Coconut Ginger Soup makes for a perfect fall meal full of flavor and deliciousness. It’s also super fun to eat–simply, use a fork to twirl the noodles and a spoon to enjoy the coconut milk based broth. Coconut milk is a great substitute for cream and is a nutritious way to add a rich and savory flavor to your dishes. Think of this soup as a healthy and gourmet version of “Ramen Noodles.”
Ingredients:
1 pint mushrooms, sliced thin
1 small jalapeno pepper, seeds removed and diced
1 tablespoon of ginger, grated with a microplane
1 quart chicken broth
1 can unsweetened coconut milk
1/3 cup of Bragg’s Liquid Aminos
1 package noodles (brown rice, soba, or udon)
1 small container bamboo shoots
1/2 cup green onions, sliced
Garnish with fresh parsley (optional)
