It’s fall and Halloween is just around the corner, which can only mean one thing–time to experiment in the kitchen with pumpkin! No need to make your own purred pumpkin from scratch. Simply, buy a good quality canned pumpkin like organic 100% pure pumpkin for use in your favorite dishes. Did you know that pumpkin is a good source of vitamin A needed for healthy vision and contains 3 grams of fiber per 1 cup serving? Pumpkin can also be used in place of oil/butter in baking and can add a creamy richness to sauces. One of my favorite things to do with pumpkin is to add it to my pasta sauce–makes for a delicious and healthy way to top pasta or spaghetti squash.
I also love starting a fall day off with these delicious pumpkin waffles. Who knew you could have so much fun with pumpkin?
Makes 2 Waffles
Ingredients:
1 cup of organic white whole- wheat flour
1 cup of almond or coconut milk
½ cup of apple sauce
½ cup of organic 100% pure pumpkin puree
½ teaspoon baking powder
1/8 teaspoon salt
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
Toppings:
¼ cup of organic whipping cream, whipped + a little vanilla extract
Organic maple syrup
Directions:
Preheat a waffle maker and turn on highest heat setting. Combine all waffle ingredients in a large bowl and mix well.
Once waffle maker is preheated, spray with organic extra virgin olive oil cooking spray or coat with organic virgin coconut oil. Add half of the pumpkin batter to the waffle maker and close. Make sure waffles are cooked through, about 3-4 minutes. Remove waffle and let cool and repeat with the remaining pumpkin batter.
Top warm waffles with whipped cream and maple syrup. Serve immediately and enjoy!
