Spirulina Pie

We typically prefer our homemade pumpkin pie on Thanksgiving but that’s only because we had our fix of Spirulina Pie yesterday for Chris Johnson’s 59th birthday.

This pie is a staple in our On Target Living family and we especially love making it for Chris’s birthday every year. This pie is healthy, easy, and is actually quite delicious believe it or not. Give it a try and see for yourself! It’s the perfect treat for aging well which is why it makes we think it makes a great birthday pie.

Spirulina Pie

Serves 8

For the crust:

2 cups raw almonds, finely ground in food processor

1/2 cup dried figs, chopped (about 2-3 figs)

1 tablespoon agave nectar or raw/local honey

For the filling:

3/4 cup coconut water

1/4 cup raw cashews

1/4 cup virgin coconut oil

1 tablespoon agave nectar or raw/local honey

1 tablespoon spirulina and chlorella tablets (about 5-8 tablets)

Toppings:

1 tablespoon of cacao nibs

Nuts of choice (pecans are a delicious dessert nut)

To make the crust, combine ground almonds and figs in a food processor and pulse until it forms fine crumbles. Add agave nectar or honey and blend to mix. (Mixture should bind together to form a crust like consistency).

Press the crust mixture evenly into the bottom and sides of an 8-inch pie pan.

For the filling, combine all of the filling ingredients in a high speed blender or food processor and blend until smooth. Pour the mixture into the pie crust and top with cacao nibs and your favorite nuts.

Freeze for at least one hour or overnight. Remove from freezer 20 minute before serving.
